It’s been all about chocolate in the High on Health house over the last few days. After David Wolfe’s lecture on Sunday night I think “chocolate” slipped into my subconscious because I’ve since been making a lot of beautiful raw chocolate creations!
On Monday night I made my friend Anna a very rich raw chocolate cake for her birthday. This recipe was borrowed from Russell James who as you know I get a lot of inspiration from. Instead of topping the cake with Russell’s tricky berry stuff (okay not tricky, but I’m lazy), I threw on some strawberries and goji berries that had been soaked until soft. And yes, I realize Russell’s cake is a lot prettier than mine, but he’s a CHEF!


I’ve been getting into the habit of keeping my fridge stocked with young coconuts, which can be a little tricky considering I’m sharing the fridge with three other vegetarians so sometimes it’s a bit of a squish.
Last night after dinner I was feeling like something chocolate, something coconut and something sweet, so I made up this coconut chocolate mousse. This one is my own creation! It’s a combination of young coconut water and flesh, a banana, raw cacao powder, vanilla and raw cashews.

It has a smooth, yogurt, creamy texture and is just delightful!
And while I was at the David Wolfe lecture on Sunday, I picked up a few “bars” of sacred chocolate, which is the raw chocolate sold through sacred foods. I absolutely love this chocolate and how super healthy it is, so of course there’s not much left.
It’s also interesting how I feel as though I need to share this chocolate, so I’m always opening it around friends and sharing it around. It must be all the love stored in the chocolate from the manufacturing process
(I’m serious, they have someone praying over the chocolate 24/7 while it’s being made!!!).

If you’re outside of the US unfortunately you can’t buy this chocolate in stores. That’s why I was so super excited when I could buy it over the counter at the lecture. But if you search around you may be able to buy online. It’s expensive but trust me, so worth it.

Yum Fran, all looks great!!! Today I also experimented a little – a put one banana, a few chunks of fresh coconut meat and a bit of rice milk into a blender and got a really yummy and healthy drink.
Looks yummy! But sadly I am having so much trouble with things I can eat im on the third day of my diet and its so hard! I have only eaten a whole grain bar, banannas, celeary&carrots dip, whole grain crackers with cheese, and eggs. I know the cheese is no good! I felt bad about eating it but I needed some taste! I’m still trying hard and hoping to pick up some items from the local grocery store, wish me luck!

Hey Jen, you can buy young coconuts from either Coles or Woolworths. Just check every one that you walk into. I live inner city south and most of the grocery stores around me stock them
They’re in the fruit and veggie section next to the berries and dates.

It would be heavenly if I eat raw chocolate while I watch Simply Raw and Fresh! I’m in the chocolate dream…lol
I agree with wanting to share raw chocolate. Ever since I started eating raw chocolate I’ve been wanting to share it with the world, so to speak! I just love how open and peaceful it makes you feel. You just feel like you love EVERYONE and that EVERYONE is EQUAL! And it’s true, everyone is equal! And the best part is it’s completely healthy. How could that get any better!?! If raw chocolate could be shared with everyone I think the world would turn to peace and love!!
I’ve been having fun making up recipes too. Yesterday I made a raw peach parfait – layers of cashew whipped cream, sliced softened peaches, my own raw granola creation, drizzled with softened wild blueberries – served in a martini glass!
Both fruits started out frozen, so I first defrosted them to release the juices, which blended well with agave to create a little syrup.
My boyfriend’s eyes lit up when he took the first bite. The cashew cream I made even had that dairy taste! I think it was combination of coconut oil and vanilla. The trick I’m finding with raw food (esp. desserts) is less is more. It’s so rich, that next time I’m using less agave, cream, & granola. More fruit!
I have all the ingredients for the mousse you made up, so I think i’m going to have to try it!
