This afternoon I had a huge craving for something with a bread or cookie texture. So I made up these almond cookies that just turned out to be amazing enough to share with you!

I was planning on eating the whole lot but they have a stopping power after about three or four. I need to learn to stop eating when I feel satisfied, not when I’m feeling sick. You know when you’re feeling full but you still love the flavor so much that you want to keep eating? Yeh, I have a big problem with that one.
But at least it’s good to note that if you’re hungry, these cookies will fill you up really quickly.
Raw Almond Cookies
3/4 cup of almond meal
1 tsp of ground cinnamon
a little bit of sea salt
1/4 cup of walnuts, crushed a little with your fingers
1-2 Tbsp of honey
1-2 Tbsp of unhulled tahini
a small handful of raisons
a small handful of sunflower seeds
1 Tbsp of coconut oil
Loving Preparation
Mix all ingredients in a bowl with a little extra love until well combined. Roll into balls.

They look delicious. yumm. I dont think that i am ready to be raw vegan for 30 days but i am gonna try to get a raw vegan cookbook to add raw foods into my lifestyle. Do you recomend any??? Thank-you and good luck for the rest of your raw vegan experiment.

Do you still take New Chapter multivitmans?? When you were living in toronto, wat bus or subway did you take to whole foods?? What do you think about the washroom tour? If you did it, it would be okie if you did not show private stuff like menstrual products or down the towlette… Thanks for considering, it would mean alot to me. More than alot.
By the wayi reccommend you got to the libaray or book shop and get Ecohololic. It is verryyy good. But even better if you live in Canada. Even though your in austrailia i still reccommend it.

I love how simple it is! I’m definitely going to try these soon. I bought too many almonds recently, so I’ll make my own almond flour in the food processor or vitamix, whichever works better.
Haha! I’m pleased that you call them cookies. There are a ton of sites with recipes out there that refer to them as ‘balls’ (my favorite is Love Veggies and Yoga: http://www.loveveggiesandyoga.com/), which is taking me a long time to get used to

Interesting, although a true vegan would omit honey, it is still an animal product. A good alternative is organic agave nectar! Other than that it sounds good!
Hi Chelsea, Yeah I’ve stated throughout this that I’m not strictly vegan because of the bee products. I do use a lot of agave in raw food preparation but I mix in honey as well because I feel as though it’s a more complete food – agave is great but is processed and has a high GI.
I just made these!! I wasnt sure how they were going to turn out because I replaced the almond meal with flax meal (it’s all we had at the house). but they came out super! I did put a little too much sea salt unfortunately, but still quite tastey. thanks for the recipe!
Those cookies look incredibly delicious. I love almonds, walnuts and walnuts. I may have to make these myself

Do you melt the coconut oil a little before you add it or just use it solid?

I forgot about that bit because it’s been so hot in Brisbane here that the coconut oil is always melted in the pantry!!!
Thanks for this recipe Fran. I have made it about 6 times now, and love them! When I feel like something sweet, one is perfect! A regular recipe for me now. Can’t wait to hear more about your new recipe book!
