Last night we had our house warming which was just wonderful! We were lucky to have great warm weather so we dressed up the back garden to make it nice and cosy for a party, and lit a fire and set up a project for night time.

I made a lot of raw food for the event, which both looked very pretty and of course tasted awesome. I took some photos just for you-

Raw chocolate mousse

Raw chocolate cupcakes
The favorite of the evening was definitely the chocolate cupcakes. Remember, these cupcakes contain no milk or processed sugars so they’re safe for health and skin conscious people like us
Here’s the recipe-
Raw Chocolate Cupcakes
Ingredients
240g mixed nuts
Dash celtic sea salt
12 pitted medjool dates
6 tablespoons cacao powder (NOT cocoa)
2 tablespoons agave syrup
1 teaspoon vanilla
3 teaspoons water
Icing
1 cup cashews
1 cup + 2 tablespoons fresh coconut milk (simply blend the water and flesh of a young coconut)
1/8 – 1/4 cup honey or agave (depending on how sweet a tooth you have)
1 tablespoon lemon juice
1 tablespoon vanilla
Pinch sea salt
1/2 cup coconut oil, melted
1 tablespoon lecithin powder
fruit to garnish
Loving Preparation
Blend nuts and salt in a food processor until finely ground. Add dates, cacao powder, agave and vanilla, process until mixture begins to stick together. Add the water and process briefly.
Roll into balls and place into patty cake containers. Place in the freezer for around half an hour or chill for 2 hours in the fridge.
For the icing, blend all ingredients except coconut oil and lecithin until smooth. Add oil and lecithin and blend until thoroughly mixed. Set in fridge for about 1 hour.
For chocolate whipped cream, just add cacao powder.
I garnished my cupcakes with fresh strawberries.

Lovely cupcakes! they’re so pretty! I’ve got some unrelated question about your dairy free diet (in the midst of transitioning from dairy to soy..) and wanted to find out what are the things you take to supplement for your calcium, folic acid..and all the things you find in dairy milk now that you’re not on it anymore? I’m a little worried that cutting down on dairy will affect me in some ways.. would love to hear from you!

Hi Nabilla, I’ve not had a problem with calcium, I get blood tests to check. If you’re worried, incorporate the grain Quinoa into your diet, it contains more calcium than milk!
Libelle, no problem and its really easy! In a food processor blend 3 avocados with 1 1/2 cups of dates and 2/3 cup of cacao powder.

In regards to Quinoa, I tried it a few nights ago and I liked it, I think I put a little too much water in the rice cooker but oh well, it was my first time. I reheated it up to use with taco Beef. The taco seasoning is wheat free and found that recipe on the internet, woo hoo, I dont get deprived now of Taco lol
