Raw Zucchini Rolls With Hoisin Dipping Sauce Recipe

This is a really yummy recipe that you can use as a main meal or as an appetizer. It’s an especially great one for those of you who don’t love the taste of seaweed, because it’s kind of like a variation of sushi rolls!

zucchini rolls

Almond Cheeze

1 cup of soaked almonds (soak overnight)
1/4 cup of water
1 Tbsp of lemon juice
a large pinch of cumin
a large pinch of oregano
a large pinch of sea salt
onion powder to taste

Raw Hoisin Sauce

4 Tbsp of tamari
2 Tbsp of peanut or cashew butter
2 tsps of apple cider vinegar
1 Tbsp of honey (more if you prefer it sweeter)
1 clove of crushed garlic
2 tsps of sesame oil
a pinch of cayenne pepper

Rolls

1 zucchini, sliced into thick strips with a wide vegetable peeler or any other great slicing implement that you have.
1/2 avocado
a handful of sprouts

Loving Preparation

Blend all ingredients for the almond cheeze until well combined. It’s okay if the mix is very chunky. Set aside in a bowl ready for rolling!

Blend all ingredients for the hoisin sauce until smooth. This is a dipping sauce so it’s great if it’s thick.

Place a large teaspoon full of almond cheeze onto the end of each strip of zucchini, followed by a slice of avocado and a large pinch of sprouts. Then roll! This recipe will make about 15 zucchini rolls.

Yum, that looks really good! I just have a question; which sprouts did you use, and what others could work also? I’m kind of new to all the sprouting/fermenting/dehydrating raw food stuff ;D

Julie- You can use any sprouts really. I used a salad sprout mix. But it’d go really well with something softer and finer like alfalfa or broccoli sprouts :)

Hi Fran,
I know this is way off topic but I don’t know if you have seen this site: howtoclearyouracne.com It does adress holistic measures. But the thing is that it recommends a lot of vitamin supplements to undertake for a few days. I dont want to become dependent on multi-vitamins although I have stopped consuming wheat and milk, but there seems there is no other answer. What do you think??

That looks so cool! So many great ingredients! I’m definetely going to try that raw hoisin sauce instead of the one usually bought in the bottle from the supermarket. The food photography is awesome by the way :) and the food …so vibrant looking
